Premium Tenderloin上ヘレ (Jou-here)
Lean wagyu fillet — the most tender cut on the menu. Grill briefly with salt, no more than 30 sec/side.
Premium Skirt上ハラミ (Jou-harami)
Deeply flavored cut, the chef's personal favorite. Pairs beautifully with our house tare sauce.
Premium Short Rib上カルビ (Jou-karubi)
Marbled short rib with rich fat. Grill until edges char and fat starts to drip — that's the magic moment.

Marbled Beef Intestineテッチャン
Plump, fatty large intestine — the king of hormone. Grill until well-charred outside, juicy inside.
Beef Heartハツ (Hatsu)
Lean, dense, almost steak-like texture. Grill briefly — overcooking makes it tough.
Beef Liverレバー (Rebaa)
Smooth, mineral-rich liver. Cook through completely (Japanese health code requires it). Pairs with sesame oil & salt.
Stomach (Mino)ミノ
Crunchy, mild-flavored beef stomach. A great gateway hormone for first-timers.
